    Shan, thanks for your comment - probably the last ever on this blog!  I've moved to http://simmertilldone.com.  As to the vanity, we haven't yet, but are going to top it with a very light polyurethane-type coating - not sticky, very clear and good for a "wet" room.  So far it's holding up fine.  Good luck with your project!
